MILLENNIAL EVOO – farga variety
This oil is the product of careful and laborious work to recover lost farms where we find olive trees of the FARGA variety. They are certified trees with more than a thousand years old and, having survived fires, frosts, droughts and all kinds of pests, they can still be admired in all their beauty and majesty, in scattered places of the Mediterranean mountains.
FARGA is an almost extinct variety that is no longer planted today, since it has been replaced by other more productive varieties. You have in your hands the liquid essence of a piece of the history of these trees that we want you to enjoy, just as our ancestors did for more than a thousand years.
TASTING NOTE
Intense aroma of green olives. Secondary aromas of artichoke, tomato, almond, green grass and banana.
Powerful and with great aromatic richness. Spicy and sweet flavor, with soft bitter tones. Low level of astringency.
PAIRING
Recommended oil for salads, vegetables, legumes and white meats. Thanks to its aromatic power, it enhances soft foods.

MERADES MORRUDA BIO

EVOO BIO – morruda variety
Organic Extra Virgin Olive Oil obtained from a first pressing of olives of superior quality and excellent aroma.
The base of the MERADES MORRUDA BIO organic oil are organically grown olives certified by the CCPAE (Catalan Council for Organic Agricultural Production). These olives must be free of potentially polluting substances, following strict controls that give the approval (if applicable) of the organic certificate. At the same time, given their fragility to the disease, they must be collected in perfect conditions of maturity and with a very special treatment.
The organic variety of Merades, has the certification seals of the European Union and also of BIO-SIEGEL (Germany) and AB Agriculture Biologique (France).
TASTING NOTE
Intense aroma of green olives. Flavor dominated by spicy and bitter nuances, but also sweet. Intense and balanced character.
PAIRING
Indicated for salads, grilled meat and fish.
PDO MORRUDA
MERADES MORRUDA

EVOO PDO – morruda variety
The Morruda variety is productive, alternate (one year of good production, and the next a year of low production) and slow to enter into production. Very late maturation in the years of good production. Not very rustic, not very resistant to drought and sensitive to cold. Moderately resistant to pests.
TASTING NOTE
Intense aroma of green olives. Flavor dominated by spicy and bitter nuances, but also sweet. Intense and balanced character.
PAIRING
Indicated for salads, grilled meat and fish.
PDO SEVILLENCA
MERADES SEVILLENCA

EVOO PDO – sevillenca variety
The earliness of entry into production is medium, with an average and somewhat alternating productivity (very regular production over the years). Rustic variety. Sensitive to drought and with medium resistance to frost. Sensitive to pests.
TASTING NOTE
Aroma of olive between green and ripe (acid-sweet balance). Secondary aromas of apple, tomato and banana. In the mouth it is sweet, with bitter and spicy tones. Slightly astringent. Secondary flavors in the mouth of walnut and almond.
PAIRING
It is a highly recommended oil for salads, vegetables and slices of bread.

EVOO PREMIUM – picual variety
It is the main variety cultivated in the Iberian Peninsula, mainly in the region of Andalusia. It owes its name to the fact that the olive it produces ends with a small tip. Variety highly appreciated for its ease of cultivation and the quality of the oil obtained.
TASTING NOTE
Intense aroma of green olives. Secondary aromas of minced grass, tomato, almond and artichoke. In the mouth it is spicy, without being aggressive, with a perceptible bitterness, sweetness and astringency and pleasant on the palate.
PAIRING
Ideal premium oil for fish, pasta, sauces, chips and stews. It also goes well with cheeses and vegetables, ham and cold cuts.

COUPAGE MERADES DOP

EVOO PDO – coupage of farga, morruda and sevillenca
This coupage is the master formula of our Master of Almazara (equivalent to the winemaker of a winery). Made by combining the three varieties of our PDO, and provides the consumer with the best of each one. A spectacular and highly valued blend that makes the MERADES DOP Coupage the company’s best-selling “variety”.
TASTING NOTE
Aroma of olive between green and ripe. Secondary aromas include green grass, tomato, almond, and walnut. On the palate it is a sweet oil with green sensations and a complex aromatic richness, pleasant on the palate, highly balanced in attributes.
PAIRING
Premium EVOO that combines with all kinds of foods and sauces because it is not aggressive and provides many aromas.
